Cutizzi

From chalky soils of Santa Paolina, we have selected the grapes from the best suited vineyards. Cutizzi is our finest expression of Greco.

Denomination: Greco di Tufo DOCG
Grape: Greco
Aging: about 4-5 months in stainless steel; contact with its lees at all time. Repeated batonnage to circulate the suspension of the fine dregs.
Organoleptic examination: the color is yellow with golden reflections. The perfume is intense and persistent. One can recognize in the nose the clear sensations of fruit, from green plum to the “Mast’Antuono” pear (a typical Campanian variety), finishing with decisive notes of balsamic of mint. One can immediately percieve in the tastes the broad acidity and the spicy minerality typical of the territory.
Food pairings: ideal to taste with raw sea food, bass fish or mozzarella di bufala.

The vine

Greco di Tufo is the most noble of the southern Italian grapes. It was known in ancient times as Aminea gemella, as it developed a large number of double clusters. According to Aristotle, the vines of Aminee came from Thessaly, the land of origin of the Thessalians who settled in Campania and planted the Greco vines on the slopes of Vesuvius. Columella, Plinio and Virgilio wrote that the grapes of Aminee have been enjoyed since antiquity for their capacity of producing wines with aging potential. The site of Tufo has been for centuries one of cultivation of Greco, given the virtues of the extraordinary characteristics of its soil.
